Pho-cking hell, the Co-Op didn’t have any fresh coriander or mint 🌿 You may know that the hot and spicy tofu and mushroom pho from phorestaurant is my all time favourite meal but since moving to the North East I’ve had to go without 😢 Well today I bit the bullet and attempted to recreate it at home because I finally found tofu puffs in my local Asian supermarket 🎉 I know it looks underwhelming but it was so full of flavour and really filled the pho void in my life. Of course it would be better with tonnes of fresh herbs but it was still very yummy! For the broth I used the oxo vegan beef stock cubes, fresh ginger, roasted garlic and onion, cinnamon stick, star anise, cloves, soy sauce, lime juice and chilli oil which I strained and it really did have the perfect balance of spicy and tangy 🔥 I made tonnes of the broth as well so I will definitely be re-making the dish later this week 😍 For veggies I used tenderstem broccoli and baby button mushrooms 🍄 Oh and yes, there are some rice noodles hiding in there somewhere 🍜
