I veganised the viral baked feta and tomato pasta! Swipe left to see the process ❤️ For the feta I blended soaked cashews, tofu, lemon juice, apple cider vinegar, garlic, salt and pepper. I kind of just made it up on the spot but I’m pleased with how it turned out! I then baked the feta mixture for approx 20 mins with tomatoes that I’d chopped and coated in olive oil, dried basil, salt and pepper. After the 20 minutes I put the pasta on to boil and added some fresh garlic to the tomatoes before stirring through the feta. This is where I would’ve added fresh basil if I’d had any 🌿 Once the pasta was cooked al dente I added it to the pan with the feta and tomato mixture, along with approx 1 cup of pasta water. In the words of the Pasta Queen I ✨massaged✨ the sauce into the pasta before plating up with some vegan Parmesan (because 1 kind of fake cheese isn’t enough), freshly cracked black pepper and red chilli flakes 🤩
