I promise this isn’t just plain spaghetti… it was my first attempt at Cacio e Pepé and honestly I think I over pepé-ed it 😂 I didn’t know it was possible to veganise Cacio e Pepé but this actually turned out quite well! All I did was dry fry freshly cracked black pepper in a pan whilst boiling some spaghetti. I mixed the Lidl vegan parmesan with some pasta water to form a sort of cream. I added the very al dente spaghetti to the pan of black pepper along with some pasta water and cooked until just before my desired level of al dente (how technical). I then added the parmesan cream and massaged this into the pasta until glossy and creamy! I served it alongside some courgettes that I’d roasted with fresh lemon, garlic and oregano 🌿 Next time I’d definitely go easier on the pepper though 😂
