I may be 23 years old but sometimes there’s nothing I fancy more than a child’s dinner 😂 Tonight I made my own version of a fillet-o-fish (which used to be my favourite)! I used the Aldi vegan brioche buns and vegan fish fingers, a Violife mature cheddar slice, lettuce, cucumber and home made tartare sauce (vegan mayo, a finely diced pickle, 2tsp pickle juice, 1tsp lemon juice, salt and pepper). Of course no burger is complete without a potato-based accompaniment so tonight I went for some crispy potato balls done in a little bit of oil, salt and pepper. And to make myself feel like this was a more balanced meal I threw some halved baby plum tomatoes and slices of cucumber on there 😊
