“BuT vEgAnS jUsT eAt GrAsS” 🤦🏻‍♀️ Ok so how about loaded chilli cheese nachos?🔥 I made these nachos last night and they did not disappoint! For the chilli I fried half a white onion and some meatlessfarm mince in a pan with a little bit of coconut oil, then added salt and pepper, cumin, smoked paprika, chipotle paste, and a tin of Aldi taco beans 😍 Once cooked I layered the aldiuk vegan cheese tortilla chips with the chilli, salsa and grated violife_foods cheese! I plated them up and garnished with fresh coriander and finely diced white onion. They were ✨stunning✨ and I definitely ate my body weight in Mexican food but that’s what Saturdays are for, right? 😋 I found the tortilla chips to be quite bland and not overly cheesy, which would’ve been disappointing if I’d had them on their own, but worked really well with all of the toppings. I’d definitely use them for this again in the future 🌶
